When Pacific Natural Foods contacted me and offered to “stock my pantry” with gluten-free, non-dairy cooking staples for review here, I was excited, since I often use their chicken and beef stock. I happily accepted their kind offer, expecting to receive a box of 3 or 4 samples.
Yesterday, I was both overwhelmed and delighted when the UPS truck pulled up and unloaded 4 CASES of Pacific Natural Food products. When they said “stock my pantry,” boy, they were not kidding!
As I eagerly tore into each box, I became downright giddy! The Prince and I checked out the contents, each with our own list of products we are eager to try. I love to make soup and was thrilled to see Beef and Chicken Pho Soup Starter, as well as Mushroom Broth, all of which are new to me. I was glad to see my old reliables, Pacific’s Free-range Chicken Broth, Low-sodium Beef Broth, and Vegetable Broth. Looks like we will be having soup once a week for awhile, and that is fine by me! Pacific Natural Foods has several interesting recipes on their website that I intend to try. The website has a nice feature where you can filter the recipes according to your allergy needs.
The Prince never met a bean he didn’t like and was happy about the Spicy Black Bean soup. The Professor looked forward to trying the Curried Red Lentil Soup, and we all appreciated the Chicken and Wild Rice which will be great for quick lunches.
The last case contained Vanilla Hemp Milk, Chocolate Hemp Milk, and Vanilla Rice Milk. The Prince loves rice milk and I am partial to So Delicious Coconut Milk, but have heard good things about Hemp Milk and will be interested in trying it.
As it turns out, yesterday was especially hectic, so the shipment arrived at just the right moment. We decided to try the Organic Santa Fe Style Chicken Soup. All three of us found it to be satisfying. It is not too spicy as to put off little people. Sometimes in ready-made soups, the chicken, beans, corn, and peppers can be a bit on the skimpy side, but not here. Each spoonful was thick with vegetables. For a true Santa Fe taste, adults might prefer to add a bit more chili powder and garlic. I had some leftover GFCF cornbread, which we served on the side with a salad and voila, one easy weeknight meal!
